I've lived in Bangkok for 10 years now and on a visit to Brighton in early July I think we ate in just about every Thai restaurant in the area - at least 10 different ones during a two week stay. We discovered the Ros Thai Restaurant only at the end of our stay, and that is the pity as my friend, who is Thai, and I would have eaten there more often. It serves about the most ethnic Thai food around there, and both it and the decor are simple, authentic, about what you would find in a typical small Thai restaurant in Bangkok. It's family run and, as opposed to the others in the area, does not substitute ingredients, some difficult to obtain but essential for an authentic taste. Good basic Thai cooking with real Thai flavor and friendly Thai atmosphere.
